Roses are red, Violets are blue. It’s almost Valentine’s Day and someone loves you!
When it comes to this day of love, some of us bake, buy and/or eat all kinds of sinful desserts. What is your dessert of choice? Chocolate is decadent. Cookies can be chewy, crunchy or chunky. Cake balls are fun and delectable. Cupcakes, well, they are mostly an excuse to consume frosting. (Honestly, I think anything with frosting is fabulous.)
I don’t know about you but it is the fun creations like this that tantalize MY taste buds. In my opinion, whoopie pies provide all the tasty features in a dessert that one could want. It incorporates a cookie and cake into one delicious treat. (But why do they call it a pie?) Also, they are easy to eat because all you need are your hands. Who can resist a pillow of fluffy frosting hugged in between two flavorful, cakey cookies! Not this gal.
I made simple semi-homemade Red Velvet and Devil’s Food versions for you to share for your loved ones this year. Or you can stuff your own face with these sweet little things. You can use any flavor of cake mix so experiment and see what flavors you enjoy most. Try them all! Don’t worry, I won’t tell anyone if you don’t. You can also use a cookie cutter and make various fun shapes. I was in such a hurry to stuff my face that I didn’t bother digging out my heart-shaped cookie cutters, which would have been more festive.
Whoopie Pies (Makes 16 cookie sandwiches.)
Cookies
1 Box Cake Mix (any flavor)
2 eggs
1/2 c butter (1 stick)
• Preheat oven to 325 degrees.
• Beat ingredients in large bowl with a stand or hand mixer until combined.
• Using cookie scoop, place them on ungreased cookie sheet about 2 inches apart. Bake 10-11 minutes.
• Let cool in pan about 5 minutes transfer to rack to cool completely while you make the filling. Or you could just enjoy them as cookies. They’re very moist! But why wouldn’t you want frosting?
Cream Cheese Filling
1 pkg cream cheese, room temperature
2 c powdered sugar
1 tsp vanilla
• Beat all ingredients in a medium bowl until combined.
• Add powdered sugar in increments of 1/2 cup to thicken if needed.
• Spread about 2 tablespoons of filling on the flat surface of cookies and sandwich together.
