To say that my husband loves peanut butter is really an understatement. I think I could slather it on a wall and he’d stand there as long as it took to lick it clean. He prefers to have a pie over a cake any day so every year I make him a peanut butter pie for his birthday. He starts asking if I’m going to make it for him about a month prior to his birthday. I guess he wants to make sure that I didn’t forget or change the plan without letting him know. I could probably make this pie every month of the year, yet he would still expect it for his birthday and still appreciate and enjoy it just as much.  Peanut butter is a strange obsession of his but I’m glad to be able to provide something that is so easy and delicious.  Plus it makes him go ‘mmmmm’. I love when I can get that reaction out of him.

My dear husband is my best critic (or worst critic depending on my mood). It’s a good and a bad thing. I care about what he thinks so much that if he doesn’t absolutely love a dish I’ve made, I feel I’ve failed. It’s crazy, I know. I may take it too much to heart but I can’t help myself. When he loves something, it’s a big accomplishment to me. He has good taste when it comes to food so I guess that is why I trust his opinion. If it’s just mediocre, he’ll tell me. He also provides tips on what he would do to make something better. I admit that most of the time it annoys me but in the back of my mind I’m thinking, “Crap, he’s right. I should have added more bacon.”

I like peanut butter but not to the extent my husband does. I have learned over the years that it is a simple treat but can be used in many ways. I’m learning to use it in more than just desserts. Peanut Butter Sauce for Thai Stir Fry and Peanut Butter Enchiladas are just a couple that I’m working to make perfect before I share.

I’ve sprinkled chopped roasted peanuts over top of this pie but there are other variations that would be just as tasty. Chocolate chips or melted chocolate would be delectable as well.
