We hosted a baby shower at the office for a coworker recently. We had big plans to make several sinful treats for this special occasion! I don’t usually need excuses to whip up homemade goodies to share at work but it had been a while since I had the time to cook or bake at all. I was super excited about being asked to help out! I was so excited that even though I worked late that day, I still had the energy to go to the store and stay up past my bedtime to make this treat.
On top of that, I found out the day before the shower that we needed to have at least one item that was low-calorie for the lovely mother–to-be. Her doctor had her on a strict diet. I was happy to accommodate of course and took that as a welcome challenge. Of all things, we agreed it must be the cake that she should be able to eat. After researching through my files and surfing online I threw together a few of the star ingredients that appeared in several of the recipes and created what I call the perfect lemon cake.
I know what you’re thinking. “Lemon Cake? Really? That’s boring!” If you don’t usually like cake because you think it’s dry or plain, this is totally the cake for you! My husband doesn’t enjoy cake but I forced him to try a leftover slice and he loved it and asked what the heck the secret was. Yes, it’s THAT good! The secret, my dear friends, is the jell-o mix. It makes this cake so moist and delicious that you’d never know it is healthy. Take it to a potluck or make it for the family. Just don’t tell the kids it’s good for them and you’ll get away with serving this super moist dessert any day.
Another variation of this would be to substitute the lemon cake mix, yogurt and gelatin with strawberry. And instead of zest of lemon in the frosting, you could just fold in diced or sliced fresh strawberries or garnish the top.

This cake is delicious. It is so incredibly moist. I’m a big fan of lemon and this cake was the perfect treat.
